This is your lovely "Mücver Baked Zucchini Fritters (Gluten-Free Option)" recipe...
serving 4 People
time 45 min
INGREDIENTS
2 zucchinis, grated
2 eggs
3 tbsp whole wheat flour (or oat flour for gluten-free)
3 scallions, finely chopped
5–6 sprigs of dill, finely chopped
1 tsp sea salt
½ tsp ground black pepper
1 tsp olive oil (for greasing)
How to Cook
Begin by taking fresh zucchini, ideally firm and free from blemishes. Grate the zucchini using a box grater or a food processor to achieve fine shreds. Once grated, transfer the zucchini to a large mixing bowl and sprinkle a light dusting of salt over it. The salt will help to draw out excess moisture from the zucchini, which is essential for achieving the right texture in the final dish. Allow the salted zucchini to sit for approximately 10 minutes. During this time, you will notice that water starts to collect at the bottom of the bowl. After the resting period, take a clean kitchen towel or cheesecloth and place the grated zucchini inside. Gather the corners of the towel and twist to squeeze out as much excess water as possible, ensuring that the mixture is not overly wet, which could lead to soggy patties.
In a separate mixing bowl, gather all the remaining ingredients required for your zucchini patties. This may include items such as breadcrumbs, eggs, grated cheese, herbs, and spices, depending on your specific recipe. It's important to ensure that all ingredients are at room temperature, as this helps them to combine more easily. Once everything is in the bowl, use a fork or your hands to mix the ingredients thoroughly, ensuring that the grated zucchini is evenly distributed throughout the mixture. The goal is to create a cohesive batter that holds together well when formed into patties.
Next, prepare your baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking and to make cleanup easier. Using a spoon or an ice cream scoop, take small portions of the mixture and shape them into patties. Aim for a uniform size, about 2 to 3 inches in diameter, so that they cook evenly. Place each patty on the lined baking sheet, ensuring that there is enough space between them to allow for even cooking and browning. If desired, you can gently flatten the patties slightly to ensure they cook through more evenly.
Preheat your oven to 180°C (350°F) while you are preparing the patties. Once the oven has reached the desired temperature, place the baking sheet in the oven and bake the zucchini patties for about 20 to 25 minutes. Keep a close eye on them as they bake, and look for a golden-brown color on the tops and edges, which indicates that they are done. If you prefer a crispier texture, you can flip the patties halfway through the baking time to ensure both sides become golden and crunchy.
Once the patties are finished baking, remove them from the oven and allow them to cool slightly on the baking sheet. They can be served warm, which enhances their flavor and texture, or you can let them cool to room temperature if you prefer. These zucchini patties make for a delightful appetizer, side dish, or even a light main course. Consider pairing them with a dipping sauce, such as tzatziki or a spicy aioli, to add an extra layer of flavor. Enjoy your delicious homemade zucchini patties!
