INGREDIENTS


  • 300 grams deboned chicken breast

  • 150 grams chopped red onion

  • 1 tablespoon crushed garlic

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/4 teaspoon ground paprika

  • 1/4 teaspoon ground turmeric

  • 1/4 teaspoon saffron threads, soaked in 1 tablespoon of warm water for 10 minutes

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh cilantro

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 3 tablespoons olive oil

  • 1 cup chicken water or just water

  • 1/2 cup plain yogurt


How to Cook


  1. In a large skillet, heat the olive oil over medium heat, allowing it to warm up gradually. This step is essential as it ensures that the oil reaches the right temperature for cooking, which will help to create a beautiful golden-brown crust on the chicken. The olive oil not only adds a rich flavor but also acts as a medium for cooking the other ingredients.

  2. Add the chicken to the skillet and cook until browned on all sides, which typically takes about 5 to 7 minutes per side, depending on the thickness of the chicken pieces. It is important to avoid overcrowding the skillet, as this can cause the chicken to steam rather than sear. You may want to cook the chicken in batches if necessary. The goal here is to achieve a nice caramelization, which enhances the overall flavor of the dish.

  3. Add the onion, garlic, cumin, coriander, paprika, turmeric, saffron, parsley, cilantro, salt, and pepper to the skillet. The addition of these spices and herbs not only elevates the taste profile but also infuses the chicken with a variety of aromatic flavors. Stir these ingredients together, allowing the onions to soften and the garlic to become fragrant, which should take about 2 to 3 minutes.
