time 25 min
INGREDIENTS
500 grams of shelled and deveined shrimp
2 large tomatoes, diced
1 large onion, diced
5 cloves of garlic, minced
2 tablespoons of finely chopped fresh cilantro
2 tablespoons of olive oil
1 teaspoon of dried oregano
1/4 teaspoon of red pepper flakes
1/4 teaspoon of ground black pepper
Salt to taste
1 tablespoon of chopped fresh mint
1 lime, cut into wedges
How to Cook
Begin by dicing the tomatoes. Select ripe, juicy tomatoes for the best flavor, and cut them into small, even cubes. This will ensure they cook evenly and integrate well into the dish.
Next, mince the garlic cloves finely, ensuring that they release their aromatic oils. Additionally, finely chop the onion, aiming for small pieces that will become translucent when cooked. Don’t forget to chop the fresh cilantro as well; this herb will add a burst of flavor and freshness to the dish.
In a large skillet, heat a generous amount of high-quality olive oil over medium heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes soft and translucent, which should take about 3-4 minutes. Then, add the minced garlic and dried oregano, stirring continuously to prevent the garlic from burning. Continue to sauté until the mixture is fragrant and the onions are fully softened, typically around 2-3 more minutes.
Now, it’s time to introduce the shrimp to the pan. Make sure the shrimp are peeled and deveined for a pleasant eating experience. Cook the shrimp in the aromatic mixture for about 5 minutes, stirring occasionally, until they turn pink and opaque, indicating that they are thoroughly cooked. The shrimp will absorb the flavors of the onion, garlic, and oregano, enhancing the overall taste of the dish.
Once the shrimp are cooked, add the diced tomatoes to the skillet along with any juices they may have released. Include slices of red pepper for a touch of sweetness and vibrant color, and add freshly ground black pepper to taste. Allow the mixture to simmer gently for 5-7 minutes, stirring occasionally. This simmering process will help to soften the tomatoes and meld all the flavors together, creating a rich and savory sauce.
After the tomatoes have softened and released their juices, taste the mixture and season it with salt according to your preference. This step is crucial, as salt will enhance the flavors of the dish and bring out the natural sweetness of the tomatoes and the savory notes of the shrimp.
Finally, to serve, garnish the dish with freshly chopped cilantro and mint, which will add a vibrant color and a refreshing aroma. Additionally, include a lime wedge on the side to allow diners to squeeze fresh lime juice over the dish, enhancing the flavors with a zesty brightness. This final touch not only elevates the presentation but also adds a burst of acidity that balances the richness of the shrimp and the sauce.

PROTIPS
For a spicier dish, add more red pepper flakes.
