  • 3 medium potatoes, peeled and chopped

  • 1 cucumber, peeled and chopped

  • 1 red bell pepper, chopped

  • 1 onion, chopped

  • 1/2 cup chopped parsley

  • 1/4 cup chopped mint

  • 1 cup hummus

  • 8 pita wraps

  • 1/4 cup olive oil

  • 1 lemon, juiced

  • Salt and pepper to taste

  1. Preheat the oven to a temperature of 400 degrees Fahrenheit (200 degrees Celsius) to ensure that it reaches the proper heat level for optimal cooking.
