  • 2 big chopped tomatoes

  • 320 grams penne pasta (80 gr per person)

  • 150 grams feta cheese

  • 1 small chopped onion

  • 50 grams chopped bell pepper

  • 20 grams chopped garlic

  • 25 milliliters olive oil

  • 10 grams paprika

  • 5 grams dried oregano

  • 5 grams dried basil

  • salt to taste

  • black pepper to taste


How to Cook


  1. Begin by heating a generous amount of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the finely chopped onion, diced bell pepper, and minced garlic. Sauté these ingredients for approximately 5 to 7 minutes, stirring occasionally, until they become tender and fragrant. The onions should turn a translucent golden color, while the bell peppers soften, releasing their natural sweetness, and the garlic infuses the mixture with its aromatic essence.

  2. Next, incorporate the chopped tomatoes into the skillet. You can use fresh tomatoes that have been peeled and diced, or opt for canned tomatoes for convenience. Add in the paprika, which will lend a smoky flavor, along with dried oregano and basil, both of which will enhance the overall taste profile of the dish. Stir the mixture well to ensure that all the ingredients are evenly combined, allowing the flavors to meld together beautifully. Let this mixture simmer for about 10 minutes, stirring occasionally, until it thickens slightly and the tomatoes break down into a rich sauce.

  3. Once the sauce has reached the desired consistency, it’s time to season it. Sprinkle in salt and freshly cracked black pepper to taste, adjusting the seasoning as necessary. This step is crucial, as it will elevate the flavors of the sauce, making it more vibrant and delicious.   4. While the sauce is simmering, bring a large pot of salted water to a rolling boil.
